Absinthe: Since its inception, Absinthe has made a reputation for itself as the elixir of choice for poets, artists, & lovers. This unique bar features an alchemical infusion of the classical European botanicals used to make Absinthe, along with a few local botanicals from our home state of California.
Coconut Cream: To craft this bar, we blend our signature lightly caramelized coconut cream with single origin Ecuadorian cacao that has been grown, harvested, and fermented at a level of care beyond most cacao in the world. This delicate handling helps break down bitter and astringent compounds naturally present in cacao, and allows the bold, smooth flavors to shine through in our finished chocolate
Dark & Salty: This 21st century mylk chocolate bar is an updated take on classical milk chocolate, with our own formulation of caramelized coconut in place of dairy. We’ve also crafted this bar with a much higher percentage of cacao, so you’ll enjoy the bold flavors of dark chocolate with the luxuriously smooth texture you know and loveWe craft this bar with heirloom cacao grown by Eco Cacao, a farmer co-operative in Ecuador that practices regenerative agroforestry – caring for the local jungle ecosystem in addition to the trees that produce their delicious cacao. A touch of crunchy nibs and pink salt from Peru’s Sacred Valley finish off this bold and beautiful extra dark chocolate.
Ginger & Rose: The soft warmth of fresh ginger root builds slowly in this delightfully smooth chocolate bar, eventually giving way to a delicate touch of rose. The balance of floral aromatics and subtle spice infused into our signature dark mylk chocolate have made this our most award-winning bar for several years running.
Golden Mylk: To craft this bar, we mill turmeric into warm molten cacao butter over the course of several hours, unlocking the nutritive potential of this prized root. A touch of cardamom & black pepper further enhances both flavor and function, with small crystals of black lava salt finishing this delicious piece of confectionary alchemy.
Turkish Coffee:With a tip of our hat to the world’s first coffee houses, we craft this bar using fresh cardamom and perfectly roasted espresso beans. We mill it all directly into molten chocolate, capturing peak flavor and smoothness in an unsurpassed expression of confectionary alchemy.
Vanilla Bean:We have crafted this lusciously smooth dark chocolate bar with a splash of our signature caramelized coconut cream, along with a touch of ultra flavorful single origin Madagascar Bourbon vanilla. Did you know that chocolate is second only to vanilla with respect to how much care and effort goes into taking the freshly farmed ingredients to the edible masterpieces we all know and love?
